Calypso Caribbean Coleslaw

Ingredients
  1. 1 bag( 10 ounces) angel hair coleslaw
  2. 1 large carrot, grated
  3. 1 large mango, peeled and thinly sliced
  4. 1 green onion, minced
  5. 1 jalapeno pepper, seeded and minced
  6. 1/3 cup Be Happy and Healthy® Snacks- Calypso Cashews
  7. 1/3 cup Be Happy and Healthy® Snacks- Jamaican-Me-Crazy Cranberry Mix
  8. 1/4 cup snipped cilantro
  9. Dressing
  10. 1 Fruitfull® Banana Cream Bar, softened
  11. 1/4 cup plain yogurt
  12. 1 Tbsp lime juice
  13. 1 Tbsp canola oil
  14. 1/4 tsp ground allspice
  15. 1/4 tsp crushed red pepper
  16. garnish- toasted coconut (optional)
Instructions
  1. Instructions: Place the ingredients for the slaw in a large mixing bowl. In a small bowl whisk the ingredients for the dressing together till well blended. Toss with the slaw mixture to evenly coat. Garnish if desired.

Fruited Frisee and Farro Salad

Ingredients
  1. 1 cup farro
  2. 1 cup torn frisee
  3. 1/2 cup berries of your choice
  4. 1/2 cup grated carrot
  5. 2 Tbsp minced green onion
  6. 2 Tbsp pumpkin seeds
  7. 1/4 cup crystallized ginger
  8. 1/4 cup flaked coconut
  9. Dressing
  10. 1 Fruitfull Coconut Cream Bar, softened
  11. 1 Tbsp canola oil
  12. 1 Tbsp lime juice
  13. 2 Tbsp snipped mint
  14. 1/2 tsp ground cinnamon
  15. Garnish-mint sprigs
Instructions
  1. Soak the farro in cold water for 20 minutes; drain.
  2. Bring a large pot of water to a boil, add the farro, reduce the heat and simmer 20 minutes or till tender yet still firm to the bite.
  3. Drain and place in a large bowl with the rest of the salad ingredients.
  4. In a blender place the ingredients for the dressing; blend till smooth. Drizzle dressing over each serving of salad.
Notes
  1. Serves 4.

Fruitfull Fruit Sunshine

  1. 2 Strawberry Cream Fruitfull® Bars or 2 of any Fruitfull® Cream Bars or 2 Smoothie Bars
  2. 1 small box (3.4 oz) of Lemon Instant Pudding
  3. 1 – 20 oz can of chunk pineapple in it’s own juice – drain and discard juice
  4. 1 – 10 oz can of Mandarin oranges in light syrup – drain and save juice
  5. 2 bananas
  6. 1 lb. Fresh strawberries
Notes
  1. This fruit dish makes an excellent side dish to accompany a Holiday brunch or a hearty Sunday breakfast.

Linda’s Easy Coconut Rice

Ingredients
  1. 1 cup uncooked rice
  2. 2 cups water
  3. 1 Coconut Fruitfull® Bar
  4. Makes 4 cups of delicious coconut rice. Fast and easy. Fruitfull® is like frozen sauce on a stick!
Instructions
  1. Cook rice as you normally would. (In my case, I bring the water to a boil and then stir in the raw rice. At that point, I reduce the heat, cover and let the rice simmer for 20 minutes.)
  2. Remove rice from heat. Unwrap a Fruitfull® Coconut bar and drop in – stick and all – then cover. Wait 5 minutes or so and remove stick and stir. Enjoy!
