Calypso Caribbean Coleslaw

Ingredients
  1. 1 bag( 10 ounces) angel hair coleslaw
  2. 1 large carrot, grated
  3. 1 large mango, peeled and thinly sliced
  4. 1 green onion, minced
  5. 1 jalapeno pepper, seeded and minced
  6. 1/3 cup Be Happy and Healthy® Snacks- Calypso Cashews
  7. 1/3 cup Be Happy and Healthy® Snacks- Jamaican-Me-Crazy Cranberry Mix
  8. 1/4 cup snipped cilantro
  9. Dressing
  10. 1 Fruitfull® Banana Cream Bar, softened
  11. 1/4 cup plain yogurt
  12. 1 Tbsp lime juice
  13. 1 Tbsp canola oil
  14. 1/4 tsp ground allspice
  15. 1/4 tsp crushed red pepper
  16. garnish- toasted coconut (optional)
Instructions
  1. Instructions: Place the ingredients for the slaw in a large mixing bowl. In a small bowl whisk the ingredients for the dressing together till well blended. Toss with the slaw mixture to evenly coat. Garnish if desired.

Fruited Frisee and Farro Salad

Ingredients
  1. 1 cup farro
  2. 1 cup torn frisee
  3. 1/2 cup berries of your choice
  4. 1/2 cup grated carrot
  5. 2 Tbsp minced green onion
  6. 2 Tbsp pumpkin seeds
  7. 1/4 cup crystallized ginger
  8. 1/4 cup flaked coconut
  9. Dressing
  10. 1 Fruitfull Coconut Cream Bar, softened
  11. 1 Tbsp canola oil
  12. 1 Tbsp lime juice
  13. 2 Tbsp snipped mint
  14. 1/2 tsp ground cinnamon
  15. Garnish-mint sprigs
Instructions
  1. Soak the farro in cold water for 20 minutes; drain.
  2. Bring a large pot of water to a boil, add the farro, reduce the heat and simmer 20 minutes or till tender yet still firm to the bite.
  3. Drain and place in a large bowl with the rest of the salad ingredients.
  4. In a blender place the ingredients for the dressing; blend till smooth. Drizzle dressing over each serving of salad.

Raspberry Pistachio Pasta Salad

Ingredients
  1. 6 ounces rotini pasta
  2. 1 cup broccoli florets
Dressing
  1. 1 Fruitfull Raspberry bar, thawed
  2. ¼ cup olive oil
  3. ¼ cup red wine vinegar
  4. ¾ teaspoon dried oregano
  5. ¼ teaspoon garlic powder
  6. 2 cups chopped fresh spinach
  7. 1 cup chopped Roma tomatoes, about 4 medium
  8. 1/2 cup Be Happy and Healthy® Snacks- Power Pistachios, chopped
Instructions
  1. Cook rotini according to package directions adding broccoli to boiling water for last 3 minutes. Drain and set aside until needed.
  2. Meanwhile, in small bowl, combine thawed Raspberry Fruitfull bar, olive oil, vinegar, oregano and garlic powder. Whisk to combine. Reserve until needed.
  3. In large bowl, combine cooked rotini, broccoli, spinach, and tomatoes. Drizzle raspberry dressing over salad. Toss gently to combine. Sprinkle pistachios evenly over salad.
Notes
  1. Serve warm.

Tropical Chicken Cashew Salad

Ingredients
  1. 2 skinless chicken breasts, grilled or broiled
  2. 2 Tbsp fresh lime juice
  3. 1 tsp kosher salt
  4. 1 fresh papaya, seeded and cubed
  5. ¼ cup shredded coconut, toasted
  6. ½ cup “Calpypso Cashews”
  7. 1 thawed H&H Fruitfull® coconut fruit bar
  8. 1 cup bean sprouts
  9. 1 cup shredded fresh carrot
  10. ¼ tsp hot sauce (or to taste)
  11. 2 Tbsp vegetable oil
  12. 1/3 cup finely minced fresh cilantro
Instructions
  1. Sprinkle the chicken breasts with half the salt, chop into ½ inch cubes. Whisk the coconut fruit bar, lime juice, vegetable oil, salt and hot sauce. Toss with the chicken, papaya, sprouts, carrot, cilantro and coconut.
Notes
  1. Serve over fresh lettuce or rice, sprinkle with the cashews.

Whassup Wasabi Sirloin Salad

Ingredients
  1. 1 lb lean sirloin steak
  2. 2 tbsp olive oil
  3. 1 tbsp freshly squeezed lime juice
  4. 1/2 tsp garlic powder
  5. 1/2 tsp cumin
  6. 1/2 tsp chile powder
  7. 1/2 bag baby spinach greens
  8. 1/2 cup dried cranberries
  9. 1/2 cup Be Happy & Healthy® Whassup Wasabi Snack mix
  10. 1/2 cup blue cheese crumbles
  11. 1/2 cup raspberry vinaigrette dressing
Instructions
  1. Mix oil, lime juice, and spices. Rub on steak and marinate in refrigerator for 3 hrs. Remove from marinade and grill over hot coals to medium well. Thinly slice. In a large bowl, toss greens, snack mix, cranberries, and blue cheese. Transfer to a serving platter. Drizzle with dressing. Arrange chopped steak over top.
