Pacific Rim Ribs

2 Fruitfull® Coconut Cream Bars,
softened
1 can ( 13.5 ounces) unsweetened coconut milk
1 Fruitfull® Pineapple Juice Bar,
softened
1 green onion, minced
2 Tbsp snipped mint
1 tsp minced ginger root
1 large clove garlic, minced
! Tbsp soy sauce
1 Tbsp rice vinegar
1/2 tsp crushed red pepper
4 pounds spareribs
garnish- mint sprigs

Instructions: Combine all
ingredients except the ribs in a blender container. Blend
till smooth. Pour over the ribs in a large plastic bag. Seal the bag
and refrigerate several hours or overnight, turning the bag several
times to evenly marinate. Grill the ribs over medium hot indirect heat
1-1/4 hours, turning and basting regularly to evenly brown. Cut the
ribs into serving portions and place on a platter. Garnish.
