Mocha Muffins

1/4 cup hot water
1 Tbsp instant coffee granules
2 Fruitfull® Coconut Cream Bars,
softened
2 eggs
1 cup all-purpose flour
1/4 cup whole wheat flour
1/4 cup cake flour
1/4 cup unsweetened cocoa powder
1 tsp baking powder
1 tsp baking soda
1 cup brown sugar
1/2 tsp ground cinnamon
1/2 cup Be Happy and Healthy®
Snacks All About Almonds
1/2 cup semi-sweet chocolate chips
1/2 cup flake coconut

Instructions: Combine the
water and coffee granules in a large bowl till the granules
dissolve. Whisk in the cream bars and eggs till well blended. Combine
the flours, cocoa powder, baking powder, soda, sugar and cinnamon. Add
to the liquid ingredients till just combined. Stir in the almonds,
chocolate chips and coconut. Divide the batter among 12 paper lined
muffin cups. Bake at 375 degrees 25 minutes or till tests done. Cool.
Makes 12.
