Cinnamon Apple Brown Rice Lettuce Cups 

 

 
1 1/2 cup long grain brown rice
1/1/2 cup water
1 1/2 cup apple juice
1 (3-inch) cinnamon stick
1 tablespoon olive oil
1/2 cup chopped onion
1 cup chopped Macintosh apples
1 teaspoon ground cinnamon
2 tablespoons apple juice
1/2 tablespoon sugar
½ cup Jamaican-me-crazy cranberry mix
1 small head Boston lettuce

Instructions: 

1. in a medium saucepan, place rice, water, apple juice, and cinnamon stick. Bring to a boil, cover, reduce heat, and simmer until cooked (about 35-40 minutes)
 
2. meanwhile, in a medium size sauce pan, heat the oil and onion on medium-low, stirring occasionally, for 5 minutes. Add apples, cinnamon, apple juice, and sugar. Cook on medium, stirring occasionally for 7-10 minutes until apples are softened. remove from heat.
 
3. Place rice into a large mixing bowl. Stir in the Jamaican-me crazy cranberry mix. Top with apple mixture and mix well. Cover and refrigerate 1 hour.
 
4. To serve, separate rinsed lettuce leave into "cups." fill with rice mixture.
