Apricot Pineapple and Sweet Potato Bake

Ingredients
  1. 1 (29 ounce) cut yams
  2. 1 (15 ounce) can apricots, drained (reserve juice)
  3. ¾ cup brown sugar
  4. 2 tablespoons cornstarch
  5. ½ teaspoon cinnamon
  6. 2 Pineapple Fruitfull® bars, thawed
  7. ½ cup crushed pineapple
  8. Reserved apricot syrup
  9. ¼ cup butter
  10. ½ cup chopped pecans
Instructions
  1. Preheat oven to 350’.
  2. Arrange yams and apricots in a well greased 8X8 baking dish. Mix together brown sugar, cornstarch, cinnamon, Fruitfull® Pineapple bars, pineapple and apricot syrup a medium saucepan and bring to boil.
  3. Cook until thickened, take off heat and add butter.
  4. Pour mixture over yams and apricots sprinkle with chopped pecans and bake uncovered for 30 minutes.
Notes
  1. Makes 6 servings.

Fruitfull Fruit Sunshine

Ingredients
  1. 2 Strawberry Cream Fruitfull® Bars or 2 of any Fruitfull® Cream Bars or 2 Smoothie Bars
  2. 1 small box (3.4 oz) of Lemon Instant Pudding
  3. 1 – 20 oz can of chunk pineapple in it’s own juice – drain and discard juice
  4. 1 – 10 oz can of Mandarin oranges in light syrup – drain and save juice
  5. 2 bananas
  6. 1 lb. Fresh strawberries
Notes
  1. This fruit dish makes an excellent side dish to accompany a Holiday brunch or a hearty Sunday breakfast.

Fruitfull Salsa

Ingredients
  1. 5 diced mangoes
  2. 8 diced tomatoes
  3. 1 bunch finely chopped green onions or 1 red onion
  4. 1 bunch of coarsely chopped cilantro
  5. Salt to taste
  6. Lime Juice Bar melted
Instructions
  1. Mix all ingredients together, chill until ready to serve or serve immediately with tortillas chips. Great as a side to Mexican dishes.

Linda’s Easy Coconut Rice

Ingredients
  1. 1 cup uncooked rice
  2. 2 cups water
  3. 1 Coconut Fruitfull® Bar
  4. Makes 4 cups of delicious coconut rice. Fast and easy. Fruitfull® is like frozen sauce on a stick!
Instructions
  1. Cook rice as you normally would. (In my case, I bring the water to a boil and then stir in the raw rice. At that point, I reduce the heat, cover and let the rice simmer for 20 minutes.)
  2. Remove rice from heat. Unwrap a Fruitfull® Coconut bar and drop in – stick and all – then cover. Wait 5 minutes or so and remove stick and stir. Enjoy!
