Tropical Protein Grains Ensemble



1 Tropical Splash Fruitfull® juice bar, thawed
1/2 cup chopped apricots
2 cups cooked quinoa, cooked directions below
2 cups cooked kasha, cooked directions below
4 cups chicken soup
1/2 cup crushed almonds

Instructions:  Add kasha and quinoa in one pot with fat free chicken soup. Boil.  Cover.  Turn to low and let simmer for 20 minutes. Fluff. Chill in refrigerator.  Combine remaining ingredients and serve cold. 

8 (1/2 cup) servings

Note from Moira: Our family used to eat a lot of pasta. I am trying to push the grains to replace the frequent pasta meal at our home. After experimenting with numerous grains and dressings...this fat-free, high protein side dish was labeled a hit with the twelve and under crowd as well as my spouse.
