Thai-refic Lettuce Wraps

 

2 teaspoons toasted sesame oil

1 teaspoon minced garlic

1 teaspoon grated peeled ginger

2 tablespoons smooth peanut butter

2 tablespoons mango chutney

½ teaspoon chili powder

¼ cup fresh lime juice

1 pound steamed medium shrimp, peeled and deveined

18 large Bibb lettuce leaves, cleaned and dried

1 medium red bell pepper, seeded and cut into 2-inch thin matchsticks

4 green onions, trimmed and cut lengthwise into 2-ince thin matchsticks

½ cup Be Happy & Healthy® Whassup Wasabi snack mix

Instructions:  In a medium bowl, whisk together the sesame oil, garlic, ginger, peanut butter, chutney, chili powder and lime juice.  Add the shrimp and toss to coat.  To assemble, lay the lettuce leaves on work surface, then place equal amounts of the bell pepper and green onion matchsticks in the center.  Next spoon the shrimp mixture on top, then sprinkle each with the Wasabi snack mix.  Roll each lettuce leaf up and serve 3 onto each of 6 plates. 

Serves 6.
