Sweet Potato Puree with Crazy Cranberry Topping

1 tablespoon olive oil

1 cup chopped onion

3 cups cubed peeled sweet potatoes

½ cup peeled, cored and chopped Granny Smith Apple

1 tablespoon minced garlic

2 teaspoons fresh chopped thyme

1¼ cup vegetable broth

3 tablespoons prepared mango chutney

⅓ cup orange juice

1 tablespoon packed brown sugar

Salt and pepper to taste

⅔ cup Be Happy & Healthy Jamaican Me Crazy Cranberry mix

Instructions:  Preheat oven to 350º.  Heat oil in a large skillet over medium-high.  Add the onions, sweet potatoes and apples; sauté until golden and caramelized about 20 minutes.  Add the garlic and thyme and sauté 1 minute more.  Transfer to a food processor along with broth, chutney, orange juice and brown sugar; puree until smooth (if using a smaller food processor, puree mixture in 2-3 batches).  Season with desired amount of salt and pepper.  Transfer to a greased 8x8x2 inch baking dish and sprinkle the cranberry mix over the top.  Bake for 30 minutes.

Serves 6-8.
