Pistachio Coconut Couscous

1 ( 14.5 ounces) can vegetable broth
3 Fruitfull® Coconut Cream Bars, softened
1 tsp minced ginger root
1/4 tsp ground cinnamon
1/4 tsp ground cumin
2 large cloves garlic, crushed
1/4 tsp crushed red pepper
10 ounces quick cooking couscous
1 small carrot, grated
1 green onion, minced
1/4 cup snipped mint
1/2 cup Be Happy and Healthy® Snacks- Power Pistachios
1 Tbsp lime juice
1 Tbsp canola oil
garnish- mint sprigs

Instructions: In a medium size pot place the first 7 ingredients. Bring to a boil over medium high heat, stirring to blend. Remove from the heat and stir in the couscous and carrot. Let stand covered 10 minutes then fluff with a fork adding the rest of the ingredients. Top each serving with mint.
Serves 6.
