Floribbean Foiled Chicken Thighs

1 can ( 16 ounces) black beans, rinsed and drained
1/4 cup diced onion
1/4 cup diced red bell pepper
1 jalapeno pepper, seeded and minced
1 mango, peeled and diced
4 skinned chicken thighs with bone
1 Fruitfull® Tropical Splash Juice Bar, softened
1/4 tsp ground allspice
1/4 tsp ground ginger
1/4 tsp crushed red pepper
1/4 tsp salt
1 Tbsp olive oil
   

Topping
1/3 cup Be Happy and Healthy® Calypso Cashews, chopped
1 tsp lime zest
1 Tbsp snipped cilantro
 

Instructions: Combine the first 5 ingredients and divide among 4- 16 inch long sheets of aluminum foil, placing in the center. Top with a chicken thigh. Combine the juice bar, spices and oil in a small bowl till well blended. Drizzle over each thigh. Fold up the foil envelope style to enclose the filling and form a packet. Place the packets seam side up on a baking sheet. Bake at 425 degrees 25 minutes or till the thighs test done. Unwrap the packets into an attractive style. Combine the ingredients for the topping and sprinkle over top of each chicken thigh. Serves 4.
