Chocolate Nutcase Muffins


 


1 ½ cups self-rising flour
1 tsp baking powder
1/2 cup chopped Be Happy & Healthy® Snacks Calypso Cashews
½ cup brown sugar
1 egg
¼ cup maple syrup
3 Chocolate yogurt Fruitfull® bars, melted
4 tbsp unsalted butter, melted
1 3.5 oz bar dark chocolate, chopped into very small pieces
12 cup muffin tin lined with paper liners, sprayed with non-stick cooking spray

Instructions:  Preheat oven to 400 degrees. Place paper liners in muffin tins and thoroughly spray with non-stick cooking spray.
Sift flour and baking powder together in bowl and stir in Calypso Cashews and sugar.
Place egg, maple syrup, melted Fruitfull® bars and butter in another small bowl and stir to combine ingredients. Fold liquid into dry mixture and then toss in chocolate pieces.
Spoon the mixture into muffin liners and place in hot oven to bake for 18 minutes. Remove from oven and cool on a wire rack.
